The -700 has throttle detents for takeoff, climb, cruise, etc...and a speed hold function that will vary pitch to hold a certain airspeed. Same for the -900. And -1000, apparently. However, there is an autopilot disconnect button (on the yoke) and an autothrottle disconnect button. Both of these can be assigned a keystroke in the PMDG menu. So engage both via autoflight, then disengage whichever you do not wish to use.
